What does "Low GI" mean, and why does it matter for diabetics?
GI (Glycemic Index) measures how quickly food raises blood sugar. Foods below 55 are "Low GI." How is it milled?
Brown rice has a GI of 68 (still medium-high) and most people find it hard to eat daily due to its tough texture.
